One of the highlights of the meal is Schouten's famous stuffing layered turkey, which he proudly slices up for each of the diners. To prepare the turkey, he opened up the turkey and took out the breast meat and breastbone, then layered the stuffing and the breast meat to create the unique pattern seen in each slice.
